  • 4 cups Organic Chicken Stock
  • 1 can Rotel Tomatoes with Chilies *you can use mild if you prefer
  • 1 cup Organic Canned black beans rinsed and drained
  • 1 cup Frozen Corn Kernels
  • 1 tsp Garlic powder or 1 clove garlic
  • 1 tbsp Chili Powder
  • 1/2 Onion (diced and sauteed with olive oil) *optional I did not use in this recipe
  • 1.5 cups Cooked Chicken cubed or shredded I used leftover rotisserie chicken

Spicy Chicken Soup Toppings

  • Grated Cheddar Cheese
  • Sliced Avocado
  • Grass-fed Sour Cream
  • Fritos Corn Chips


  • Bring all ingredients except chicken to a simmer in a medium stockpot on medium heat for 10 minutes.
  • Add cooked chicken and simmer for 5 minutes more.
  • Ladle into soup bowls, garnish with toppings and enjoy!
