Organic Chicken Stock

Rotel Tomatoes with Chilies
*you can use mild if you prefer

Organic Canned black beans
rinsed and drained

Frozen Corn Kernels

Garlic powder or 1 clove garlic

Chili Powder

Onion (diced and sauteed with olive oil)
*optional I did not use in this recipe

Cooked Chicken cubed or shredded
I used leftover rotisserie chicken
Spicy Chicken Soup Toppings
Grated Cheddar Cheese
Sliced Avocado
Grass-fed Sour Cream
Fritos Corn Chips
Instructions
Bring all ingredients except chicken to a simmer in a medium stockpot on medium heat for 10 minutes.
Add cooked chicken and simmer for 5 minutes more.
Ladle into soup bowls, garnish with toppings and enjoy!
