Light Queso Recipe
This light queso recipe uses low-fat cheddar and bursts with flavor from fire-roasted tomatoes, jalapenos, and spices. Perfect for game day!
- 4 tablespoons Unsalted Butter *Grass-fed
- 1 14 ounce can Fire-Roasted Tomatoes
- 3 cups Light Cheddar Cheese *Grated
- 1/4 cup Pickled Jalapeno Peppers * Finely chopped. Seeded if desired
Grate cheese and chop jalapenos. Drain tomatoes. Set all the ingredients aside.
In a small saucepan saute the drained fire-roasted tomatoes in the grass-fed butter. Cook until thick about 10 minutes on medium high heat.
Lower the heat and add grated cheddar, jalapeno and spices. Stir with a wooden spoon until melted. Transfer the dip to a serving dish and serve immediately!
