Goat Cheese, Spinach and Roasted Red Pepper Frittata

- Sauté red peppers on medium heat with a bit of olive oil and garlic powder in a cast iron skillet.
- Add spinach and sauté until slightly wilted.
- Remove vegetables from pan and transfer to a bowl. Add a bit of extra olive oil if desired and beat eggs and milk until combined. Add salt and pepper.
- Pour eggs into skillet and when the bottom is just set sprinkle the vegetables evenly over the top.
- Crumble goat cheese and sprinkle over the top. At this point you have 2 options: a) cover the skillet and allow goat cheese to melt slightly or b)but the pan under the broiler for a moment, paying close attention.
- Remove from heat and serve family style at the table. Enjoy!
