Goat Cheese, Spinach and Roasted Red Pepper Frittata

1- Sauté red peppers on medium heat with a bit of olive oil and garlic powder in a cast iron skillet.
2- Add spinach and sauté until slightly wilted.
3- Remove vegetables from pan and transfer to a bowl. Add a bit of extra olive oil if desired and beat eggs and milk until combined. Add salt and pepper. 
4- Pour eggs into skillet and when the bottom is just set sprinkle the vegetables evenly over the top. 
5- Crumble goat cheese and sprinkle over the top. At this point you have 2 options: a) cover the skillet and allow goat cheese to melt slightly or b)but the pan under the broiler for a moment, paying close attention.
6- Remove from heat and serve family style at the table. Enjoy!

Ingredients

  • 1 tbsp olive oil
  • 1 small red bell pepper (sliced)
  • 2 handfuls baby spinach leaves (roughly chopped)
  • 8 eggs
  • 2-3 tbsp crumbled goat cheese
  • salt and pepper to taste

Notes

  • Feel free to brown or caramelize some onions before adding the red pepper if your family likes them.
