This Spicy Chicken Soup recipe with Mexican flavors, is so easy to put together with pantry items in just 20 minutes! It’s a perfect weeknight dinner!

Don’t tell my husband but the real reason I like making this soup is because it gives me an excuse to indulge in some Fritos as a garnish. I know, I know, Fritos are not healthy but I’m all about having the occasional treat here and there! We will talk more about the garnishes of the soup later because that is where ALL the magic happens!

Ingredients for Spicy Chicken Soup
One of the best parts of this recipe is how quickly it comes together with ingredients you probably already have on hand! I always plan to make it when I have leftover rotisserie chicken which greatly reduces the prep time but you easily roast or grill a chicken breast while you are prepping the other ingredients. All you need is:
- cooked chicken
- chicken stock
- Rotel tomatoes with chilies
- black beans
- frozen corn
- chili powder
- garlic
- onions (I’m allergic so I don’t use them in my recipe but feel free to add them if you wish)

What makes the soup Spicy?
The chilies in the Rotel tomatoes are what gives this soup heat. If you don’t like spicy or want to make this recipe kid-friendly, just use mild tomatoes. This is what I do when I serve this to my boys and then I just add a bit of cayenne pepper to mine and my husband’s. Alternatively, if you want to amp up the spices you could play around with the addition of cumin or jalapenos.

A Note about Salt…
I don’t add any salt to this recipe as the stock, rotisserie chicken, tomatoes and beans all have salt not to mention the toppings that will be added in the grand finale later! Feel free to add some if you wish but I don’t recommend it…especially if you like yours with extra Fritos like I do! My friend Jessica over at Fantabulosity got the Fritos in my head when she served it with this spicy soup!
How to Make Spicy Chicken Soup
- add all ingredients except chicken to a medium stockpot
- ladle soup into serving bowls and garnish as desired
- simmer on medium heat for 10 minutes
- add chicken and simmer for 5 more minutes
- ladle soup into serving bowls and garnish as desired

Spicy Chicken Soup Toppings
My favorite toppings for this soup to complement the Mexican flavors are, cheddar cheese, grass-fed sour cream, avocado slices and of course Fritos lol! Some fresh cilantro or toasted corn tortillas would also be fabulous! This truly is my favorite part of enjoying this soup…the toppings!

Spicy Chicken Soup
Ingredients
- 4 cups Organic Chicken Stock
- 1 can Rotel Tomatoes with Chilies *you can use mild if you prefer
- 1 cup Organic Canned black beans rinsed and drained
- 1 cup Frozen Corn Kernels
- 1 tsp Garlic powder or 1 clove garlic
- 1 tbsp Chili Powder
- 1/2 Onion (diced and sauteed with olive oil) *optional I did not use in this recipe
- 1.5 cups Cooked Chicken cubed or shredded I used leftover rotisserie chicken
Spicy Chicken Soup Toppings
- Grated Cheddar Cheese
- Sliced Avocado
- Grass-fed Sour Cream
- Fritos Corn Chips
Instructions
- Bring all ingredients except chicken to a simmer in a medium stockpot on medium heat for 10 minutes.
- Add cooked chicken and simmer for 5 minutes more.
- Ladle into soup bowls, garnish with toppings and enjoy!
