This healthy copycat version of Reese’s Peanut Butter Eggs are made with simple ingredients and delicious! Perfect for making with kids for Easter!

What are Peanut Butter Eggs
If you are a fan of the classic Reese’s Peanut Butter Cup then you know that Easter is that special time of year when you can enjoy not only mini peanut butter cups wrapped in pretty pastel foil wrappers, but also Reese’s Peanut Butter Eggs. As a little girl these were what I was looking for in my Easter basket and still do! My family growing up was always a fan of the peanut butter and chocolate combination so I was so happy when I had children of my own that they love it too!
There is something about the sweetness of the chocolate and the saltiness of the peanuts that creates the ultimate dessert satisfaction! This year as we live in a new reality with Covid -19, Easter will be a bit different. Instead of meeting up with family to exchange Easter treats and have an annual cousin Easter egg hunt, we will be home in Quarantine.

I still wanted to do something special for the boys and thought about making these special treats for them. I love that there are refined sugar-free and healthy compared to the store-bought original. They come together in minutes and the boys love shaping the peanut butter filling into egg shapes and dipping them in chocolate. The pretty pastel sprinkles add the perfect amount of Easter whimsy too (but feel free to leave them out if you are a Reese’s puritan)!
Ingredients for Peanut Butter Eggs
- Roasted Salted Peanuts
- Natural Peanut Butter
- Dark Chocolate Chips (My boys prefer milk chocolate)
- Maple Syrup
- Vanilla Extract (Optional)
- Coconut Oil

How to Make Healthy Peanut Butter Eggs
These eggs are so easy to make the kids can almost do all the steps on their own. They will just need help to process the peanut butter filling.
Step 1: Combine roasted peanuts and natural peanut butter in food processor and blend until smooth a little bit of grittiness is fine it adds to the classic texture in my opinion.
Step 2: Add vanilla and maple syrup and process again. Mixture should be easily moldable. Adjust wet and dry ingredients to get the right texture. For instance if your family prefers them sweeter add more maple syrup and roasted nuts if too runny.

Step 3: Prepare a baking sheet by lining it with parchment paper and set aside. Form peanut butter mixture into the shape of eggs by scooping 1 and 1/2 tablespoons of filling and molding into an oval shape. Place on baking sheet and press down slightly. Repeat until all 10 eggs are formed.

Step 4: Freeze eggs for 15 minutes. While eggs are freezing melt chocolate chips with coconut oil in microwave in 20 second increments until evenly melted. Dip frozen eggs in melted chocolate. Allow excess to drip in bowl and place on baking sheet. If using sprinkles, garnish immediately before chocolate has set.
How do you store Peanut Butter Eggs?
We like these eggs served cold so we keep them in the refrigerator, but you can keep them out in an airtight container for a few days if they last that long!
These would be super cute packaged in cellophane bags with a ribbon to give out at an Easter party! We plan to leave them on the porch for cousins packaged this way during this Covid-19 period.

Can you substitute the Nut Butter?
You can definitely experiment with with the butter and chocolates in this recipe which is what makes this recipe so versatile. The key is to form a mixture that is moldable. I think roasted almonds, almond butter and chocolate would be amazing! If you have a nut allergy try experimenting with sunflower butter and seeds and you can still enjoy these!
