As a Mompreneur at home with an almost 3 year old, the days are unpredictable to say the least! As much as I would like to “plan” my day, there are ALWAYS curve balls thrown into the plan. We like to stick to clean eating as much as we can from Sunday to Thursday and splurge a bit on the weekend. I like to have some quick and easy recipes in my arsenal for chaotic nights when my hungry school aged boys and hubby get home. This frittata is one of those recipes. The day started out with me planning on making a quiche, but after some bumps in the plan (a.k.a me working over my allocated time for the day and a grumpy toddler, demanding a bath/pool party for Batman and Robin at a very inopportune time) I decided that something had to give. So, as much as I adore a crust on a quiche in the interests of time, I decided to go with a frittata ! The possibilities are endless with ingredients to add! Some of our favourite combinations are broccoli and cheddar cheese, roasted tomatoes,basil and bocconcini, mushroom and gruyere to name a few! As a side dish I made my crispy oven baked fries that everyone devours but we also like toasted slices of rye bread with avocado (adults) or jam (the kids) or a yummy side salad. This could also be a great meatless Monday option! I wouldn’t even really call this a recipe as it’s so simple to throw together, more of a method and idea for a quick 10 minute meal!
Goat Cheese, Spinach and Roasted Red Pepper Frittata
- 1 tbsp olive oil
- 1 small red bell pepper (sliced)
- 2 handfuls baby spinach leaves (roughly chopped)
- 8 eggs
- 2-3 tbsp crumbled goat cheese
- salt and pepper to taste
- Feel free to brown or caramelize some onions before adding the red pepper if your family likes them.
